Drop by a local farmer’s market for the some of the ingredients to this recipe
INSTRUCTIONS
Sautée onions and garlic to bring out the flavours. Add all other ingredients and simmer until apples and butternut squash are tender. Purée in food processor until smooth. Salt and pepper to taste.Serves 6INGREDIENTS
- 1 lb local apples
- 1 lb local butternut squash
- 5 cups water
- 1/4 cup chicken stock
- 1 cup apple juice
- 1 small diced local onion
- 1 oz chopped local garlic
- 2 tsp curry powder
